As I was catching up on my YouTube subscriptions, this little cake appeared in the list for one of my favourite channels, Cupcake Jemma. The hubby happened to be around at the time and watched it with me then requested I make it immediately. Unfortunately for him, there were no blueberries in the house, but the next day I headed to the shops to pick up some to make this ridiculously delicious Blueberry Crumble Cake.
Chocingtons (Triple Chocolate Lamingtons) – Daring Bakers Challenge
When this months Daring Bakers Challenge was announced, I was pretty excited as lamingtons were on the menu. You have seen me make these delightful little morsels before when I made the standard lamington covered in coconut as well as the colourful sprinkletons.
This time, I decided to go with chocolate as the main, and only, flavour and whipped up these Triple Chocolate Lamingtons which I have dubbed Chocingtons.
Vanilla Sprinkle Cake (Gluten-Free)
A couple of years ago a tutorial from The Cake Blog appeared in my Pinterest feed for a DIY Rainbow Sprinkle Cake. Of course I pinned it straight away, but in true Cath fashion, it has taken a couple of years to actually have a go at it.
I did not make the cake in rainbow colours as Kate from The Greedy Baker did in the tutorial as I was going to have five macaron colours to match the cake (however in the end, I only ended up with two) but as there would be a few gluten intolerant folks consuming this cake I converted my favourite vanilla cake recipe into a gluten-free version so no one was left out.
Vanilla Malted Milk Cake
Given there are two Popcorn and Malteser Macaron posts on this blog, you might assume that I am a fan of the malt flavour. Well that assumption is correct my friend. In fact, my go-to milkshake flavour is the combination of two of my favourite things, vanilla and malt.
So when the Vanilla Malted Milk Cake by Hungry Rabbit appeared on my Pinterest feed one day, it immediately went on my ever-growing list of things to make.
Maple Apple Cake
So you will have gathered by now that I am in love with the rose shape/swirl as I use it for my cupcakes, on cakes and even, to a possibly far-fetched connection, in my vegetable tart. It will come as no surprise that I actually own a rose shaped cake tin.
I have had this beautiful tin from NordicWare for quite some time now and I definitely do not use it enough. So it was time to call on another recipe I have had pinned for quite some time now, being a Maple Apple Cake, to showcase the gorgeous shape this tin creates.
Sticky Date Cake with Butterscotch Sauce
For the latest birthday cake at the hubby’s place of employment, a sticky date cake with butterscotch sauce was requested. As with the hummingbird and carrot cake I have made them previously, this was another that I had not attempted before so I checked my trusty Women’s Weekly Classic Cakes book, which of course contained said recipe, and got to work.
Hummingbird Cake with Cream Cheese Icing
When there is a birthday at the hubby’s work, one of the women in his office is the dedicated birthday cake maker.
For one of the recent birthdays, she was unavailable so I was asked to make the birthday cake for D. The cake chosen was one I haven’t made before, being a Hummingbird Cake with Cream Cheese Icing, but it was super simple and went down a treat with everyone, most importantly the birthday girl.
Pastel de Tres Leches (Three Milk Cake) – Daring Bakers Challenge
A few months ago I finally signed up to be a Daring Baker, which is something I had been hearing about via some of the blogs I follow. The main reason it interested me was so that I would make something I might normally not have made as I tend to stick with what I am comfortable with.
This month was no exception. I had heard of a “three milk cake” a few times recently and it definitely intrigued me. When I saw that September’s challenge was for Pastel de Tres Leches, I had the reason I needed to finally make this cake, even if I didn’t get to eat it myself.
Orange and Almond Cake
Where I work, on your birthday you bring in a cake to share with everyone but if truth be told, any day is a good day for cake in our office. Recently it was K’s birthday and the cake she made was an Orange and Almond cake. After the first few bites, there were a few requests for the recipe and I decided to give this moist, gluten free cake a go myself last weekend.
Lemon Sour Cream Cake with Pine Nuts
The hubby and I have a little addiction to pine nuts. We will put them in everything we can whether it be pasta, lasagne or salad. However, I have never had them in a sweet dish.
Imagine my delight when I bought Classic Cakes by The Australian Women’s Weekly with one of the very first cakes in the book being a Lemon Sour Cream Cake which just happens to be topped with pine nuts. The oven was calling.
